The journey to this new vision was inspired by extensive travel and reflection, with chef Lauren DeSteno drawing from her personal ties to the Mediterranean, including recent trips to Nice, Cannes, and Monaco. Dishes like the Langostine Terrine, Lobster Knuckles, and Cabbage Farci exemplify the fresh, vibrant energy that defines Ai Fiori’s new direction.
